The method by which we achieve and maintain our
high standards is to purchase the best freshly landed fish
directly from the fish markets of the North East of
Scotland, where it is taken immediately to our
fish processing facility "Downies of Whitehills" where it is
held in a chilled area at 0 - 4 degrees until ready to
be filleted, then skinned. At this point it is
transferred onto trays for freezing. This is carried
out in the factory's Individual Quick Chill facility
which freezes the fish to -18 degrees. After this, the
fish is breaded, graded, packed and moved to the cold
store ready for dispatch to wholesale and retail
outlets or to internet customers purchasing from the
